Green Velvet Cupcakes

(Makes 12 cupcakes)
INGREDIENTS
For the Cupcakes:
1 1/4 cups All-Purpose Flour
1 cup Granulated Sugar
1 tablespoon Cocoa Powder
1/4 teaspoon Salt
1/2 teaspoon Baking Soda
1 Egg
1/2 cup Vegetable Oil
1/2 cup Milk
1 teaspoon Vinegar
1/2 teaspoon Vanilla Extract
Green Food Coloring

For the Frosting:
8 ounces Cream Cheese, softened
4 tablespoons Butter, softened
3 cups Powdered Sugar
3 tablespoons Baileys Irish Cream

Frosted Cupcakes

DIRECTIONS
Preheat your oven to 350 degrees Fahrenheit.
Prepare a muffin tin with paper liners.
Begin by beating the egg, then incorporate the other wet ingredients and whisk them together until they are well mixed.

Mixing Ingredients

In a different bowl, mix all dry ingredients together. Gradually add the wet mixture into the dry ingredients, stirring until fully combined. Then, add enough food coloring to achieve your desired shade of green.

Cupcake Mixture

Pour the batter into the cupcake liners, filling them about two-thirds full. Bake for approximately 20 minutes or until a toothpick inserted in the center comes out clean. Allow to cool on a wire rack.

Frosting Preparation

In a mixing bowl, cream together the softened cream cheese, butter, and Baileys. Slowly incorporate the powdered sugar and mix until you reach your desired consistency.

Transfer the frosting into a piping bag and decorate the cupcakes as desired.
