Easter Bunny Butt Cookies
With Easter approaching, my children are eagerly requesting some bunny-themed treats.
These delightful sugar cookies are creatively stacked to resemble the back of an Easter Bunny!
Ingredients:
1-1/3 cups plus 1 tablespoon all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1/2 cup butter, softened
3/4 cup white sugar
1/2 egg
1/2 teaspoon vanilla extract
Instructions:
Begin by preheating your oven to 375°F (190°C). In a small bowl, mix together the flour, baking soda, and baking powder; set this aside.
In a large mixing bowl, cream the softened butter with the sugar until the mixture becomes smooth. Add in the egg and vanilla extract. Then, slowly incorporate the dry mixture until well-blended. Roll rounded teaspoonfuls of the dough into balls and arrange them on ungreased cookie sheets.
To shape the bunny feet, take one full-sized cookie and divide it into four equal portions, rounding each piece into a circle before baking.
Place the cookies into the oven and bake for 8 to 10 minutes, or until they turn a golden color. Allow them to rest on the cookie sheet for two minutes before transferring them to wire racks to cool.
In a medium microwave-safe bowl, combine the frosting with a few drops of pink food coloring, stirring until homogeneous. Microwave this mixture uncovered on high for 10 to 15 seconds until it softens but does not become translucent.
To assemble the bunny butt, frost one whole cookie slice along with two of the bunny feet. Position the bunny feet at the base of the cookie slice and place a marshmallow in the center for a tail. Decorate the bunny feet with candy sprinkles or additional frosting. Repeat this step with the remaining cookie slices and bunny feet.

- In a microwave-safe bowl, mix frosting with 1 to 3 drops of pink food coloring until combined. Microwave for 10 to 15 seconds on high, just until soft.
- To assemble, frost one whole cookie and two bunny feet with the pink frosting. Attach the bunny feet to the bottom of the cookie. Add a marshmallow in the center for the tail and decorate the feet using sprinkles or additional frosting. Repeat with the remaining cookie pieces.
